Raw Chocolate





Holistic Nutritionist, Amy Michelle Weiss, shows you how to make a simple Raw Chocolate. Eat this simple recipe as is or use it as a base recipe for other chocolate treats. 

1. Base Recipe (Vegan)

Raw chocolate 

10 dates
4 tbsp Cacao Powder
1 tbsp Cinnamon
1 tsp Vanilla Extract 
2 tbsp Honey

Put all ingredients into food processor and blend until it forms a log. Break off chunks and roll into balls or shape into brownie squares. Serve plain or  Roll/top in coconut shreds, nuts, cacao nibs or goji berries. 

This simple 5 ingredient Raw Chocolate Recipe packs a powerful punch of nutrients and minerals while satisfying the deepest chocoholics chocolate dreams. This recipe is low fat, raw, vegan, gluten free, chemical free with no GMO's and can be eaten in abundance as a superfood that's incredible for your health. Yum! 


2. Balanced

10 dates

Adding coconut oil adds fats to the recipe. It's still raw, vegan, chemical free with no GMO's. Due to the fat you need to eat this version of Raw Chocolate in Moderation. 

3. Splurge

10 dates 
4 tablespoons cacao powder
1/2 teaspoon lemon zest or extract 
1/2 teaspoon vanilla bean or extract
Dash Black Pepper
Dash Cayenne Pepper  
2 tablespoon honey
2 tablespoons coconut oil 

Put all ingredients in a food processor and pulse and grind until it forms a log. 
Break off chunks and roll into balls or shape into brownie squares and place on wax paper. Place in freezer for 1 hour. Serve plain or top with coconut shreds, nuts, cacao nibs, salt or goji berries

Adding the extra coconut oil will turn this simple Raw Chocolate into a smooth chocolate raw mouse cheesecake but will load this treat with fat. Although this recipe is still raw, vegan, chemical free, gluten free with no GMO's the high fat content makes it a splurge you should eat on occasion

1. Cacoa -

 Cacao powder is an unfiltered and more nutritious version of cocoa! Cacao is a super food that has dietary fiber, polyphenols and Magnesium! Polyphenols in Cacao help reduce cardiovascular and inflammatory diseases, metabolic disorders, and is used for cancer prevention. Their antioxidant properties may be responsible for many of their pharmacological effects, including the inhibition of lipid peroxidation and the protection of LDL-cholesterol against oxidation, and increase resistance to oxidative stress. 3. Honey - 

Possesses antiseptic and antibacterial properties. Honey has been known to help heal wounds, control acid reflux, reduce stomach inflammation and reduce allergy symptoms. (*studies are still being conducted to scientifically show the benefits on a molecular level but historically honey has been known to benefit the aforementioned ailments)
4. Cinnamon- 

Cinnamon may reduce inflammation, have antioxidant effects, and fight bacteria. Lab studies have found that cinnamon may lower blood sugar and help reduce cholesterol levels. It's has also been used as an appetite suppressant as well as a  natural sweetener to replace refined sugar or artificial sweeteners.

A Prison Reform that Benefits Immigration and Children's education

If we are only as great as our weakest link then the only way to build a stronger foundation for America is to start at the bottom of our society. I am very much so a believer in the trickle up system where we implement change in our local government to eventually see change on a federal level.

As it stands right now we have millions of people incarcerated sitting around deemed useless to society. Our government isn't making use of our prison systems to rehabilitate prisoners and create functional human beings.  We have huge issues with immigration and education as well in this country, that we don't have the resources to do a total overhaul of these systems.  What we need to do is to start implementing a new system that will phase out the old while creating the economy to support the new systems.

My idea is simple and starts with the basic fundamental lessons that a human needs in order to live, teaching man to feed himself.  We create an agreement between farmers and the prisons that would allow farmers to use prisoners for day labor instead of illegal immigrants.  The prisoners are taught the basics of farming at the same rate that the illegal immigrants were paid, a portion of the prisoners income goes to fund immigration reform.  The other portion of their income goes towards the cultivation of the land around the prisons.  Prisoners are given a choice for which part of farming they are interested in learning about seeding, cultivation, picking, packaging, distribution, marketing and cooking, for example.  They are each given a daily schedule for their participation in the prison farm and they actually learn their role while doing it.  Giving them structure, an education and a foundation for being a productive person.  When you teach someone with purpose and they feel good in their accomplishments they will continue down that path.

Corporations that want to be involved with the farming program will need to make public bids with full disclosure about what their products contain and the actual impact their products may have on the human body and environment, if chemicals are involved.  The general public would vote on which companies will be allowed to provide for this program, in their local area.

The foods that are grown on the property are used to feed the prisoners. The prison is now supporting itself and freeing a large amount of tax payers money for the reform of other programs.  Without chemicals in their foods, the prisoners will mentally flourish. Many prisoners mental issues may be alleviated without the effects of improper nutrition and chemicals in the foods. Prisoners who have mental disabilities and aren't able to adhere to proper behavior will be able to be put on courses of medications and get the psychological attention they need because the system won't be overrun with prisoners whose issues were based on the lack of structure, proper nutrition and education.  We will truly be able to see who can be rehabilitated and who has mental illness.

The surplus food that is grown by the prisons is shipped to local schools to provide each child with a free lunch and snack of whole foods organically grown.  The prisoners being responsible for the shipping and logistics of the delivery of the food, further teaching them skills that they can use when they are released.  Providing food for schools would open a large portion of funding for other aspects of education.  Also by providing children with food that nourishes them we are increasing their ability to learn and focus.

This simple idea teaches a person how to feed themselves.  It can rehabilitate a person who was never given the chance to learn how to be a contributing member of society.  We have now taken people who are costing society and turned them into people who are paying their debt to society by creating economy while rehabilitating themselves into someone who can function in society because they were given the structure, education and proper nutrition to succeed in life.  The trickle up effects of this program would be insurmountable and would solve a lot of the issues in this country that seem to keep going deeper and deeper into despair.

Like I said at the beginning, the only way to change the problems that have developed because of the corruption of the American government is to start by changing our foundation at our weakest link.

1 tsp Nutmeg

1 head of Romaine
2 cups Spinach
1 apple
1 lemon
1 inch Ginger Root

Ginger Root: 

Ginger root can be used as a remedy for travel sickness, nausea and indigestion and is used for gas, colic, irritable bowel, loss of appetite, chills, cold, flu, poor circulation, menstrual cramps, bloating, heartburn, flatulence, indigestion and gastrointestinal problems such as gas and stomach cramps.

Apples:

Mother's Day

Yesterday, Mother's Day would normally be filled with laughter and fun activities but instead I watched my mother suffer in pain from side affects from Cancer treatments. Turning to me and saying "your mommy isn't doing so good but I'm fighting". 

This is why I am trying to educate people about chemicals in their foods, how to use holistic nutrition instead of pills and giving cancer prevention nutrition tips.  I'm giving to you the advice and guidance that's lost on the ones I love the most whose path is solely Western Medicine. It's hard to watch a cancer patient continually eat a cancer causing diet. It's hard not to cringe because I know what every bite she takes is doing to her. It's also hard to watch your hero, my father, follow closely behind her, as his blood cells are suddenly having trouble producing. 

We all have the power to choose how we fight our battles. I just know there's a better way than watching someone we love die from the treatments and not disease.  

It's simple!  What you eat either keeps you alive or slowly kills you. If you don't get cancer, you will get something else. I wish people knew how precious every bite of food they eat really is to their health.

Drunken Noodles ~ 3 Ways ~



Raw Earth Medicine: Drunken Noodles 

3 Drunken Noodle Recipes 1 Vegan Base!

1. Vegan: 

2 cups Black Rice
2 cups Rotelle Pasta
          Or
16 oz 7 Lotus Rad-Na Noodle 
(Traditional Jasmine Rice Flat Noodle)

1 cup diced White Onion
1/2 cup minced Garlic
1/2 cup chopped Jalapeño
1/2 cup chopped Chickpeas (garbanzo)
1 cup chopped fresh Basil 
1/2 cup San-J Organic Tamari Soy Sauce
1/2 cup starch water from Pasta 

Cook Preferred Noodle and/or Rice and save 1/2 cup of starch water 

Use 1/2 tsp coconut oil to grease pot
Sauté Onion, Garlic and Jalapeño until onion start to sweat then add starch water and Noodles 
Add Soy sauce, Chickpeas and Basil; mix well 

Top with Chopped Basil, Asparagus and cracked pepper and Enjoy

Add Soy sauce, Chickpeas, Shredded Chicken/Tofu and Basil; mix well 


Top with Chopped Basil, Asparagus and cracked pepper and Enjoy

By adding coconut oil and chili oil we are adding saturated fat to the dish.  The addition of Tofu adds chemicals to the meal from processing, unless you make the tofu yourself. Adding Chicken to the dish adds carcinogens. High in protein, nutrients and taste this naturally gluten free recipe is a well balanced healthy meal. 


3. Splurge 

Use Vegan Base from above and add

Place Meet in Bag
Marinade:

1/2 cup chopped Garlic
2 tbsp Coconut Sugar 
Grill or Sear 

8 oz Grilled Marinated Hanger Steak or Pork (hormone/chemical free) 
2 tbsp Vegetable Oil
1 tbsp Chili Oil

Cook Preferred Noodle and/or Rice and save 1/2 cup of starch water 

Use 2 tbsp Vegetable Oil and 1 tbsp Chili oil to grease pot

By adding more oils and meat we are over flowing with saturated fat to our taste buds delight but not to the health of our heart, cardiovascular system, cholesterol and blood pressure.  Adding Beef/Pork to the dish adds carcinogens. High in protein, nutrients but packed with saturated fat and carcinogens this naturally gluten free recipe is a delicious splurge we should only eat on occasion. 

Creative tip: sub out cilantro for basil and add a completely different twist to the dish adding another 3 recipes to your arsenal for healthy cooking.

Serrano Cilanto Margarita








Raw Earth Medicine: Serrano Cilantro Margarita



1.5 oz Tequila (add more if you like it stiff)

4    oz Fresh Squeezed Lime Juice

1    oz Fresh Squeezed Lemon Juice

1/4 cup Cucumber

1/2 of a serrano pepper (add more if you like it super spicy)

Handful Cilantro (can substitue basil)

Optional: dash of sea salt or pink himalayan salt



Muddle Cucumber, Cilantro & Serrano Pepper with all the Liquids!



Add Ice then Shake



Serve on the rocks or add club soda for straight up!



Holistic Nutrition Drinking Tip:



Adding cucumber to any drink adds water content which counteracts the dehydrating effects of alcohol.  Everything in this cocktail is natural without any chemicals or refined sugars. Mung Beans & Black Rice Recipes



Raw Earth Medicine: 

3 easy Mung Bean & Black Rice recipes with 1 Vegan Base

1 c Mung Beans 
1 c Black Rice 
4 c Water/No sodium vegetable stock

Bring liquid to a boil in pot
Add Mung Beans & Black Rice 
Simmer until soft 

1. Vegan- 

1 c diced Japanese Eggplant 
1 c diced Potato or Lotus 
1 c mint 
3 tbsp yellow curry
1 tbsp cumin
1 tspn black pepper
2 c Vegetable Stock 
Optional: dash of sea salt
                 1 tsp crushed red pepper

As the mung beans and rice start to soften add 2 c of Vegetable Stock and all the above ingredients. Cover for 2 minutes and stir, repeat until potato is softened, then serve. 

Top with basil, diced tomatoes and Avocado

- this meal is a high protein, low fat and nutrient packed dish!  Aside from the avocado you can eat this dish in abundance!  There are no chemicals, no GMO's, it's all organic and wholesome! 


2. Balanced

1 c cubed organic non GMO tofu 
1 c diced Japanese Eggplant
1 c diced Potato or Lotus 
1 c mint 
3 tbsp yellow curry 
1 tbsp cumin
1 tspn black pepper
2 c Vegetable Stock 
4 oz Coconut Milk
2 tsp Coconut cream 
1 tsp Chili Oil (to taste)
(Optional - dash sea salt)

Top with chopped basil then serve. 

- by adding coconut cream and chili oil we are adding saturated fat to the dish.  The addition of Tofu, coconut milk and coconut cream adds chemicals to the meal from their processing.  High in protein, nutrients and taste this is a well balanced healthy meal.

1 c Kobe beef (seared)
           Or
1 c cooked shrimp, chicken or pork 
1 c diced Japanese Eggplant
1 c diced Potato or Lotus 
1 c mint 
3 tbsp yellow curry (add more for stronger curry)
2 tbsp cumin
1 tspn black pepper 
1 tbsp Coconut Sugar
4 oz Coconut Milk
2 tsp Coconut cream 
1 tsp Chili Oil (to taste)
4 c Vegetable Stock
(Optional - dash sea salt)

As the mung beans and rice start to soften add 4 c of Vegetable Stock and all the above ingredients. Cover for 2 minutes and stir, repeat until potato is softened.

Top with Basil and Red Chili Flakes then serve

    - This yummy curry has many nutrients and is high in protein but adding animal products adds carcinogens to the dish. The coconut milk, beef, coconut cream and chili oil make this dish high in saturated fat. The chemicals, fats and carcinogens contribute to raising your risk of developing cancer, high cholesterol, high blood pressure, obesity, cardiovascular diseases and heart disease. This dish is a delicious splurge that should be enjoyed on occasion.
